
Traditional Iyer Style Sambar Recipe
A Timeless South Indian Classic
Sambar is an integral part of Tamil Brahmin home cooking, known for its balanced flavors — mildly spicy, gently tangy, and rich in aroma. Prepared using lentils, tamarind, vegetables, and traditional spice blends, it pairs beautifully with idli, dosa, and steaming rice.
This recipe follows a traditional Iyer-style method, bringing out the authentic native taste of South Indian kitchens.
Ingredients
For Cooking Dal

½ cup Toor Dal (Split Pigeon Peas)
-
¼ tsp Turmeric Powder
-
1½ cups water
Vegetables (choose any)
Drumstick (Murungakkai), Carrot, Brinjal, Pumpkin, Radish, potato, shallots (Sambar/ chinna vengayam) ..etc
For Sambar Base
-
1 small lemon-sized tamarind (soaked & extracted)
-
1–2 tomatoes, chopped (optional for more sourness)
-
1–2 tsp Iyer Aathu Sambar Powder (depends on the water qty and thick consistency)

Salt as required
For Tempering
-
1 tsp Mustard seeds
-
1–2 dry red chillies
-
A pinch asafoetida (hing)
-
Few curry leaves
-
1 tbsp gingelly oil (sesame oil)
Garnish
-
Fresh coriander leaves
Preparation Method
1. Cook the Dal
Pressure cook toor dal until soft. Mash well with turmeric and keep aside.
2. Cook Vegetables in Tamarind Base
In a vessel, add:

Tamarind extract with required water
-
Vegetables (Brahmin style usually have single vegetable eg: drumstick, potato, pumpkin.etc).

Add a spoon of fenugreek
3. Add Sambar Powder
Add Iyer Aathu Sambar Powder 1 or 2 spoons , mix well to check the watery consistency to be medium, accordingly add sambar powder.
Let it boil for atleast 15 – 20 minutes.
Cook until vegetables become soft and tender. This step releases the true aroma of traditional spices.
4. Add Cooked Dal
Add mashed dal to the mixture.
Adjust water for consistency and add salt.
Simmer for 5–7 minutes until flavors combine.
5. Tempering (Tadka)
Heat gingelly oil and add:

Mustard seeds

Dry red chillies
-
Curry leaves
-
Asafoetida
Pour over the sambar.
6. Garnish & Rest
Garnish with coriander leaves.
Let the sambar rest for 10–15 minutes for enhanced flavor.
